I am not a BBQer. I only used the BBQ once a year to do a prime rib roast for the Spousal Unit's birthday. The rest of the time, the Spousal Unit did it.
With the oven dead, I decided I should learn more about bbqing if I had to cook our meat/meals on it every day until the stove arrived. It has been a learning curve like no other for me.
1. Oil your bbq before each use. I clean the grates and then oil them before turning on the heat. I tried oiling after I turned on the heat and had quite the flames.
2. Marinade or brine meat for 2-4 hours. It gives flavor to the meat and brining will help the meat from drying out. Right now I'd only brine pork chops.
3. Direct vs indirect cooking. Sometimes one, sometimes both.
4. Don't turn the meat over many times. Meat does not like to be over handled. This is where indirect heat comes into play.
Cooking hamburgers was something we learned from family. We only use lean ground beef, handle it carefully, and season it lightly. I press them flat, get them real cold, and grill them on a griddle on the BBQ. I try to flip them only once. Thank you family for teaching us how to make great burgers.

BBQ Pork Chops I did not use this recipe but it is close to the one I used and can't find. I read on another site to make the brine, let it sit to infuse the flavors, then cool in the fridge to very cold before adding the pork chops.

Bacon Wrapped Smoked Meatloaf - I baked it in the oven for 50 minutes at 350F. I also used 1.5 lbs of lean ground beef.
